Orange Autumn Pecan Pie
6 whole large eggs
1/4 cup (1/2 stick) melted butter
2 and 1/2 cups sugar ( white or brown)
Juice squeezed from one orange
1 teaspoon orange extract
1 cup Autumn Honey pecans
Mix all the ingredients until well blended. Pour into 9" pie shell. The pecans will rise to the top.
Bake at 350 degrees. Cover edge with silicone to keep the crust from burning. Bake approximately one hour. Pie is done when it does not move and a toothpick comes out of the center clean. If the pie moves or the toothpick has any filling clinging to it, it is not done.
